So remember when I was all "yo, it's fall?"
Yeah, well, apparently, I was smoking crystal meth since it's 67F degrees and humid. Being that my apartment really has no cross-breeze, turning on the oven on a day like today means sweating out all the liquids I've drank all day. That and tomorrow is my six month physical check (cholesterol was a little high last time), so that means it's time for something healthy that hopefully that you don't cook. Or at least something that you cook minimally. (Because seriously not eating a healthy meal as your last before a physical is like not brushing your teeth before the dentist. You gotta look like you at least tried. Oh, and I had mashed potatoes at lunch.)
Anyway, this inevitably means salad.
Tonight's salad
- arugula
- red pepper
- tomato
- cucumber
- red onion
- black beans
- avocado
- tempeh (marinated in soy sauce, rice wine vinegar and sesame oil), saúteed in olive oil
- Um, really? Yeah, I didn't think you needed instructions on making a salad Melissa...
The dressing was simple: soy sauce, rice wine vinegar, and olive oil.
Oh, and some pita and hummus. Delicious!

I'm no chef. I'm barely a cook. And certainly not in the professional sense. I work in mobile for a living, but I enjoy cooking almost as much as I love
